Asian, Main plate
DRESSING:
3/8 c soy sauce
4 1/2 tb lemon juice
3 tb minced ginger
3 tb tahini
2 1/4 tb honey
1 t dried crushed red pepper
3 tb sesame oil
SALAD:
12 oz chuka soba, yellow japanese noodles or linguine
3 carrots
1 cucumber
1/2 bunch green onions
6 oz snow peas (or sugar snaps)
1-2 bell peppers
sesame seeds (optional)
1. Mix all salad dressing ingredients together in a lidded jar.
2. Boil noodles and set aside to drain with a small amount of oil.
3. Julienne the carrots, de-string the snow peas/sugar snaps, cut the bell peppers into small squares, cut green onions into matchsticks.
4. Bring water to boil to lightly steam vegetabls. Steam just until tender crisp, the carrots, snow peas, peppers and lastly, the green onions. Set all into ice water.
5. While veggies steam, seed the cucumber and slice.
6. Mix all ingredients together and allow to chill overnight. Serve with toasted sesame seeds on top.
